I need Ideas of what to put in the cooler that is healthy and easy to make. Not just snacks but meal ideas that will help fill me and lose weight! <p><i>Answer by JennyP</i><br/>You really might want to make an investment and get a convection oven or microwave that you can plug into the trucks&#8217; lighter.  This would certainly help you make some dishes that can be filling and nutritious and yummy.  If you do stay at home for a while, you can cook up some things and freeze them, then put them in your cooler to use on the road.  None of those sound appealing?  Here are some other ideas:</p>
<p>1.  Salads, salads, salads!  Bring chicken, cheese, canned veges like beets, garbanzo beans, kidney beans, seedless cucumbers, carrots,tomatos and low fat dressings.<br />
2,  Low fat whole grain tortilla wraps:  fill tortillas with lowfat cheese, meat, veges, and drizzle with your favorite dressing, roll up and enjoy.  You can also do this with marinated cooked chicken, and make lettuce wraps.<br />
3.  Soup and chili:  in large thermos&#8217;s, carry homemade soup or chicken chili, enjoy with extra veges and whole grain crackers.</p>
<p>When you take a rest stop, add an extra 5 minutes and take a brisk walk, stretch, and drink plenty of fresh water.  Fill up between meals with healthy snacks that include plenty of fresh fruit and veges, and, if you&#8217;re eating out on the road, make sure that you are choosing healthy menu items. <p>go Japanese, most ingredients have very long shelf life such as seaweeds. tofu, miso paste and soy sauce.</p>
<p>complete nutritious meals can be cooked very quickly.</p>
<p>For the crockpot, you can cook overnight and have your meal ready to reheat whenever.</p>
<p><i>Answer by Florence A</i><br/>Wow! This is a challenge but I will do my best to give you a few ideas.My husband is always out in the field with his job. What I fix for him is usually leftovers from the previous night which always includes meat. I package the &#8216;meal&#8217; for him in aluminum foil. A couple of hours before he eats, he puts the package on the dashboard where the sun heats it most from the heat of the window. He claims his meals are always hot and ready to eat. This means that when you are home, you will need to prepare these in advance, freeze them and put them out for dinners for you and your bf.<br />
I hope this gives you one idea.</p>

So in the cooler I&#8217;d put things you&#8217;d use in a day or two that are &#8216;good buys&#8217;: lunch meats, cheeses, turkey bacon or breakfast protein of choice, prepared veggies for snacks or dipping, cheese spreads or dips for snacks. I&#8217;d have on hand: bread, crackers. I&#8217;d have cottage cheese, yogurt and fruits. Mixing the first two with later. Cooler or fridge. If for some reason you can&#8217;t get to store and want something warm and nourishing, have some ramen noodle soup and frozen or canned veggies. </p>
<p>You seem to imply you have a fridge, but freezer? Not certain. If you do, when at home make big portions of things you love to freeze. (chili, stew, soups). Save them for cold nights, thaw, heat. Enjoy!</p>

<p>I would shop a lot more often, for less food at a time. There is no reason to stockpile your whole cab full of food. First most canned and boxed food is horrible for you. Second, you can sure use that tiny space for better things. Third, if you shop more often your food will be safer.</p>
<p>I would also invest in some extra gear to cook with. With just a few pieces you can cook pretty much the same way as you do at home. I would do a 1-2 burner propane stove, a reversible griddle/grill pan, and a non-stick cooking set&#8230;all from the camping section of any Wal-Mart or Academy. These items are made to be compact and portable, easy setup, easy cleanup. All together the cost could be as low as -&#8230;not bad for giving you so many more options.</p>
<p>I&#8217;m aware that when the truck isn&#8217;t moving, you aren&#8217;t making money, so I know you can&#8217;t just stop and cook every meal. But you do make stops for showers, laundry etc? You can tack on a cooking break to any one of those. Every couple days, stop for a short term stash of groceries, including some nice fresh ingredients that you can take straight to the rest stop and cook without concern for how you will store it. Maybe some fresh greens and tomatoes for a salad, some frozen shrimp or some fresh salmon filets or tuna steaks, and bell peppers to grill up, maybe even some sherbet&#8230;if you are stopping for the night, maybe you can even get some beers or some singles of wine.</p>
<p>Also take a few minutes each morning before you hit the road, to make your drinks for the day (from tea bags and crystal light powders, etc and gallons of water) and prep some fresh produce for the day if needed, so you aren&#8217;t rolling along using knives and peelers in a moving vehicle. If you don&#8217;t have to trim your items to eat them, just eat them whole at the time. You can make a fresh dip by sprinkling some dried dill or some other salt free seasonings in a container of Greek yogurt. </p>
<p>Okay I hope that was not too bossy. I hope you see how easy it would be to really improve over living out of a cooler and a coffee pot.</p>
<p>Here is more what you asked about:</p>
<p>Fresh fruit, like grapes, apples, bananas, oranges, baby carrots, fresh broccoli and cauliflower, bell peppers, cucumbers are all easy to prepare in the morning and eat all day. </p>
<p>Quick oats from the round box will cook with coffee pot water. Add raisins, cinnamon, maybe even some peanut butter, any and all.</p>
<p>Some muffin mixes are just add water. Mix as directed and use for pancakes. They are flavored so you don&#8217;t need a lot of extra stuff to eat them.</p>
<p>Some items that rehydrate without cooking, just add hot water: Minute Rice (get brown) and couscous. You can make either with some pouch chicken, some chopped dried apricots, and some slivered almonds, and some seasoning&#8230;complete meal. If you get the stove&#8230;you can properly heat it but the couscous will be edible with just hot water. Add everything else after.</p>
<p>Eggs are great. With a stove you can boil them to store in the cooler, easy proteins while you are rolling along&#8230;or you can make omelets or whatever at your cooking stops. </p>
<p>You can also keep yogurt cups, sugar free pudding and jello, applesauce cups, cans of mandarin oranges, pickles, etc..</p>
<p>Cereal is great for breakfast, and snacks, dry or with milk. I like all the cheerio flavors. They don&#8217;t have sugar dust on them to make a mess, and they are yummy. My fav is chocolate.</p>
<p>If you like chips choose triscuits, tortilla chips, potato chips. These are all three ingredients each: potato/wheat/corn, oil, and salt. The ones spray painted with flavor dust (another mess) have a lot of unnecessary ingredients.</p>
<p>Tortillas are a great option for bread. I also like this new thing called &#8220;sandwich thins&#8221; they are like the skimmed top of a bun or bagel but thinner than a slice of bread. 100 cal for the top and bottom together. This is great for any type of sandwich. If you want to skip the bread or need some extra fiber, you can put your sandwich filling in between two lettuce leaves.</p>
<p>You can use packets of tuna or chicken instead of cans. It is good protein in a salad, on a sandwich, in a wrap. </p>
<p>You can also make GORP. &#8220;Good old raisins and peanuts&#8221; is a very simple trail mix with balanced nutrition. Just dump equal amounts in a container and combine them. It will stick with you and satisfy all your salty/sweet/crunchy/chewy cravings.</p>
<p>If you get the stove, you can cook any sort of pasta, real rice, some canned beans, some lentils, quick barley, or whatever. Many of these can pair up as a meat substitute, or you can choose ONE and a meat, add a green salad for a balanced meal.</p>
