A classic Sichuan dish although mine is not so traditional as I don’t bother frying the eggplant first. I just simmer/braise it in the sauce which makes it a nice and simple recipe. A classic in our kitchen too.

A simple go-to meal.

SHRED THE CABBAGE
(I used a mandoline. Be VERY careful: it can take off a finger. I chopped the smaller cabbage pieces with a knife.)

TOSS WITH:
*Oil (I use peanut oil; olive oil for stronger taste).

*Malt vinegar.(I like the flavor. I avoid balsamic: it colors the cabbage.)

*Kosher salt and freshly ground black pepper, to taste.

*A pinch or two of sugar. Less is better. You can always add more later.

*Finish with dill. I didn’t have any fresh; so i substituted with dried.

Cover, and allow to sit for an hour or so in the refrigerator.
