Question–: Has anyone got any good simple and healthy recipe ideas?
I’m trying to lose weight and long story short I need some simple and healthy (food that will assist weight loss) recipe ideas. I was wondering if anyone had any simple ideas or any websites which will have them. I would love to know how to use vegetables more in my food, although I only like a few vegetables (peas, carrots, kidney beans, tomatoes). Thanks in advance.

Also I am not very advanced at cooking, so the simpler the better.

Easiest way to eat healthy is to make a quart of green smoothie everyday.
You put 2 cups water in your blender. Add dark green lettuce, spinach, chopped collards, chopped kale, or chopped chard. Pulse the lettuce until you have about 2 1/2 cups. Puree for about 2 minutes. Then add a banana and about 1 1/2 or 2 cups of chopped up fruit, apples, pears, pineapple, oranges, strawberries, raspberries, mango, etc. blend another two minutes, then taste it. It usually tastes very good, like fruit, because the lettuce is very mild in flavor it takes on the fruit flavor. If the smoothie doesn’t taste good, adding banana, more fruit, agave nectar, or stevia are all ways of adding the perfect touch. Make a blenderful everyday and you will be eating 4 cups of greens and 3 cups of fruit. Excellent nutrition, yummy, and very easy.

For the preparing snacks like pancake, idli, dosa, porridge, do not forget to add some vegetables to it. Garnish it with grated cucumber or fruits like pomegranate, sliced banana, strawberry or apple.
Use black pepper instead of chilliflakes.
Use honey instead of sugar. Jaggery can also be used as it is a good source of iron.
Prepare a smoothie of the fruits available and have it in the breakfast. Great energy provider.

Chocolate Easter Nests:
8 ounces (227 grams) semi-sweet or milk chocolate, chopped
2 – 2 1/2 cups chow mein noodles
Garnish:
Small jelly beans, speckled malted milk eggs, or other egg shaped candy
Line a baking pan with a piece of aluminum foil, smooth the foil, and then butter or spray the foil with a non stick vegetable spray.
Melt the chocolate in a heatproof bowl over a saucepan of simmering water. Gently fold in the chow mein noodles, being careful not to break them.
Spoon six mounds of the mixture onto the prepared pan and, using your fingers, form each mound into a 4 inch (10 cm) nest shape. Make a small indentation in the center of each nest.
Place the pan, with the chocolate nests, in the refrigerator to set (about 30 minutes). Just before serving, remove the nests from the refrigerator and place some small jelly beans or other egg shaped candy in the center of each nest.
Makes about six – 4 inch nests.

Ingredients:
chicken breasts (1 for each person)
1 egg
2 cups of shredded cheese
1 box of instant stuffing mix
salt and pepper

Preheat oven to 350 degrees. Pound each chicken breast so it’s thin and can be stuffed. Salt and pepper the chicken. Cook the stuffing according to the directions on the box. Once cooked, put a little stuffing on each chicken breast and roll it up and stick a toothpick in it. Grease a casserole dish (9×13) and place the rest of the stuffing in the casserole dish. Place the stuffed chicken in the casserole dish on top of the stuffing. Beat egg and brush over chicken. Spread shredded cheese over the top of it all and place the whole casserole dish in the oven for 30-40minutes. It turns out delicious! We usually have corn and mashed potatoes with it.

ingredients:
asparagus
salt
pepper
olive oil
wide egg noodles, or bowtie pasta, or fettuccine

Directions:
1. Snap the woody ends off the asparagus spears. Discard the bottoms, and cut the tops into ~1 inch pieces, with a diagonal cut. (The diagonal cut doesn’t really matter, but it looks nice.)
2. Bring a large pot of water to a boil. Cook the noodles or pasta according to the package directions.
3. Meanwhile, while the pasta cooks, heat the olive oil in a large skillet. Add the asparagus, and saute until crisp-tender. Salt and pepper to taste.
4. Drain the pasta, and mix it in the skillet with the asparagus. Toss it around in the pan to get a nice coating of oil on the pasta. Enjoy!

You did not specify appetizer, entree or dessert, so I choose dessert. Here are 3 of my absolute favorites.

Amaretti Cookies

8 ounces (225 grams) canned almond paste
1 cup (200 grams) superfine white sugar
2 large egg whites
Extra granulated sugar for dusting cookies

Preheat oven to 375 degrees F and line two baking
sheets with parchment paper. Have ready a pastry bag fitted with a 1/2 inch plain tip.

Break the almond paste into small pieces and place in bowl of electric mixer along with the sugar. Mix on low speed until very fine. Add the egg whites in three additions, mixing well after each addition. Continue mixing the dough until very smooth, about 3 to 4 minutes.

Fill the pastry bag with the almond mixture. Pipe 1 1/2 inch mounds onto the parchment paper, spacing about 1 inch apart. After you have filled the baking sheet with cookie mounds take a damp paper towel and lightly press the top of each cookie to smooth out the surface (you want to smooth out the tip of dough at the top of each cookie caused from piping). Lightly sprinkle a little sugar on top of each cookie.
Bake for 15 minutes, or until the cookies have risen, are a deep golden color and have tiny cracks. Remove from the oven and place baking pan on a rack to cool. When cool gently peel cookies from parchment. If they stick to parchment, turn the paper over, take a damp paper towel and gently wipe the bottom of the parchment paper to loosen the cookie. Makes about 40 cookies.

Pignoli Cookies

12 ounces almond paste
1/2 cup white sugar
1 cup confectioners’ sugar
4 egg whites
1 1/2 cups pine nuts

Preheat oven to 325 degrees F (165 degrees C). Line 2 cookie sheets with foil; lightly grease foil.
Mix almond paste and granulated sugar in food processor until smooth. Add confectioners’ sugar and 2 egg whites; process until smooth.
Whisk remaining 2 egg whites in small bowl. Place pine nuts on shallow plate. With lightly floured hands roll dough into 1 inch balls. Coat balls in egg whites, shaking off excess, then roll in pine nuts, pressing lightly to stick. Arrange balls on cookie sheets, and flatten slightly to form a 1 1/2 inch round.
Bake 15 to 18 minutes in the preheated oven, or until lightly browned. Let stand on cookie sheet 1 minute. Transfer to wire rack to cool.

Flourless Chocolate Torte

12 ounces semisweet chocolate, in chips or small pieces
1/2 pound (2 sticks) unsalted butter, cut into 1-inch pieces
6 eggs

Preheat the oven to 350°F (175°C) F. Grease or spray a 9- or 10-inch tart pan with removable bottom with nonstick spray and wrap the outside and bottom with aluminum foil so the bottom is water tight. If you have no tart pan, line the bottom and sides of a 9-inch pie plate with parchment paper or very smoothly with aluminum foil.
Melt the chocolate and butter in the microwave or in a heavy pan over very low heat, stirring with a rubber spatula or wooden spoon until completely melted. Set aside.
Lightly beat the eggs and stir them into the melted chocolate mixture. Pour the chocolate mixture into the tart pan, cover with foil, and set it in a heavy roasting pan. Pour hot tap water into the roasting pan halfway up the sides of the tart pan and place it in the preheated oven for 35 to 45 minutes. Remove the pan from the oven and uncover it.
The torte will be a soft batter that will solidify when cold. Let it cool to room temperature on a wire rack, and then cover it with plastic wrap. Refrigerate or freeze at least 2 hours. Release the sides of tart pan. You can freeze the well-wrapped torte at this point for up to 3 months.
When ready to serve, cut the still cold or even frozen torte into 8 pieces with a hot, wet non-serrated knife. (Clean the knife in hot water after each cut.) The torte will defrost rapidly and is best moved when frozen.
