Easy Salsa Recipe
1 clove garlic
2 green onions
1 to 3 jalapeno peppers (remove the seeds if you don’t want it too hot)

1 28 oz can chopped tomatoes, drained (reserve 1 Tbsp of the juice)
1 Tbsp lemon juice (or squeeze 1/2 a fresh lemon)
OPTIONAL: fresh cilantro leaves (depends on the flavour you like. We add about 6 sprigs)
salt and pepper

Salsa is good on chicken and fish!

garlic cloves.. I usually put 1 whole head because my husband and i love garlic.. but you can put however many you want.
half white onion.
about 8 chile de arbol (the long skinny chile).

put them in a saucepan.. fill it up with water and bring to a boil..

in a blender put a bit of cilantro..
once the water is boiled and cools down a bit,
put everything in the blender.. except the water!!
just put a bit of water… maybe 1/3 cup of the boiled water.. put a bit of salt..

2 large tomatoes, seeded (don’t have to) and diced
1/2 small sweet onion, finely chopped (like Texas sweet or red)
1-3 jalapeno, finely chopped
2 tablespoons cilantro, chopped
1 clove garlic, finely chopped
2 tablespoons lime juice, fresh squeezed
1 teaspoon olive oil
3/4 teaspoon salt
1/2 teaspoon cumin
1/4 teaspoon black pepper

Combine all the ingredients and chill for 2 hours before serving with chips.
The Cilantro is very important to this dish.

Here it is, as simple as can be from cooksillustrated.com:

One Minute Salsa

This quick salsa can be made with either fresh or canned tomatoes, but if you’re using fresh, make sure they are sweet, ripe, in-season tomatoes. If they aren’t, canned tomatoes are a better choice.
INGREDIENTS

1/2 small jalapeño chile or 1/2 chipotle chile in adobo sauce, minced
1/4 small red onion , peeled and root end removed
1 small clove garlic , minced or pressed
2 tablespoons minced fresh cilantro leaves
1/4 teaspoon table salt
pinch ground black pepper
2 teaspoons lime juice from 1 lime
2 small tomatoes (about 3/4 pound), ripe, each cored and cut into eighths, or one (14-ounce) can diced tomatoes, drained

Pulse all ingredients except tomatoes in food processor until minced, about five 1-second pulses, scraping sides of bowl as necessary. Add tomatoes and pulse until roughly chopped, about two 1-second pulses.
To Make Ahead:
The salsa can be refrigerated, wrapped tightly in plastic wrap, for up to 2 days. Season with additional lime juice and salt before serving.

I made an unusual salsa the other day. Started with 2 cooked tomatoes and a handful of those small Serrano peppers. I chopped them in my blender, with salted pepper and garlic powder. I thought it was too hot for my taste so I looked in the fridge and took a peach and cut it up into the blender- then I still thought it was too hot but did not want to add water so I added 4 tablespoons of cranberry sauce. It tasted out of this world!! I loved it and my friend did too. I recommend it!!
