6 to 8 eggs, scrambled.
1 # cottage cheese.
Ham or bacon, diced or crumbled
Spinach or brocolli, chopped fine or diced
cheddar cheese, about 1/2 pound
pre designed pie crust.
Line pan with crust, mix ingredients, fill pan, cook about one hour at 350. Always works for me. good luck.

INGREDIENTS:
1 (3 ounce) can bacon bits
1/2 cup chopped onion
5 ounces shredded Swiss
cheese
3 ounces grated Parmesan cheese
1 (9 inch) deep dish frozen pie
crust
4 eggs, lightly beaten
1 cup half-and-half cream
DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a medium bowl, mix the bacon, onions, and both cheeses. Place this mixture in the unthawed pie crust.
3. Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture.
4. Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, until top of quiche begins to turn brown.

This is an easy one with a crunchy hash brown crust. You can change the fillings to whatever meats, cheeses, veggies you like, but it is a great basic recipe.
Ingredients
3 cups, shredded frozen hash browns, thawed and drained
4 tablespoons (1/2 stick) butter, melted
3 large eggs, beaten
1 cup half-and-half
3/4 cup diced cooked ham
1/2 cup diced green onions
1 cup shredded Cheddar
Salt and freshly ground black pepper
Directions
Preheat oven to 450 degrees F.
Gently press the drained hash browns between paper towels to dry them as best as possible. In a 9-inch pie plate, toss the hash browns with the melted butter into the plate. Press them into the bottom and up the sides to form a crust. Bake for 20 to 25 minutes until golden brown and starting to crisp.
Meanwhile, in a large mixing bowl, combine the remaining ingredients. When the hash brown crust is ready pour the egg mixture over it and return to the oven.
Lower the oven temperature to 350 degrees F and bake for about 30 minutes until the quiche is light golden brown on top and puffed

Quiche is very free-form, you can put whatever you like in there. Just remember the ratio of 1 egg to every half cup of cream or milk. Also use your pie plate to measure your fillings so you don’t overflow your plate. Grate your cheese straight in there and add your chopped fillings, dump them in a bowl, toss with a tablespoon or two of flour and any “dry” seasonings then line your pie plate with pastry and dump your fillings back in there. Top with the custard mixture (add any “wet” seasonings like dijon mustard, etc with your custard mixture) and bake at 350 for about an hour (check it after 45 – 50 minutes) for a deep dish pie plate.
My favorite combinations are:
Chopped crisp cooked bacon, diced avocado, diced roma tomatoes, sharp cheddar, swiss and parmesan with a bit of mustard mixed into the custard
Ham, green onions, cheddar and swiss
Sauteed onions, garlic and mushrooms; shredded zucchini, cheddar, monterey jack and parmesan
Cooked, crumbled sausage, sauteed onions and green peppers and cheddar and monterey jack
Smoked swiss (makes it taste like bacon, even though it’s a vegetarian quiche), roma tomatoes, baby spinach, parmesan and monterey jack
Cheddar cheese, mild diced green chiles, diced roma tomato, topped with guacamole, salsa and/or sour cream after baking
Leftover chopped roast beef, cheddar, pepper jack cheese, sauteed onions and mushrooms
I’m very fond of just digging around in my refrigerator and seeing what kind of leftovers I have and turning those into a quiche. It makes it a different dish which my family *will* eat even if they hadn’t been going anywhere near the leftovers previously!
Most important thing to remember about quiche – put what YOU like and think would taste good together in there and have fun creating your very own quiche!

SPINACH QUICHE
1 pkg (8 oz.) cream cheese, softened
4 eggs
1 cup pet evaporated milk
1/4 to 1/2 tsp. ground red pepper
1 pkg (10 oz.) frozen, chopped spinach, thawed and thoroughly drained
1/2 cup diced ham and/or chopped onion
1 prepared deep-dish pie crust, frozen
In a medium bowl, beat cream cheese with electric mixer until creamy. Beat in eggs, evaporated milk and red pepper.
Squeeze spinach between paper towels until almost dry. Stir spinach and ham or onion into egg mixture.
Pour into frozen pie crust. Sprinkle with salt and pepper to taste.
Bake in a preheated 350 degree F. oven on a preheated baking sheet for 55 to 65 minutes, or until a knife inserted in center comes out clean.
Makes 6 servings.

If your making Quiche just remember that its always 2 eggs to every cup of milk or heavy cream mixed together!
Pie shell And whatever your heart desires to put into the pie shell then pour the mixture in the pie shell, you might want to add a little salt and pepper if its Savory! Hope this helps!

Simple Quiche
Ingredients:
3 eggs
1 ½ cup 2% milk
1/4 tsp salt
1/4 tsp black pepper
6 oz shredded cheddar cheese
1 cup chopped onion
1 pie shell
Directions:
Lightly beat eggs then and the rest of the ingredients.
Mix and pour into pie shell.
Cook at 325 degrees for 30-45 minuets or until when poking it with a toothpick the toothpick comes out clean.

**Broccoli-Cheddar Quiche**
1 ready-to-use refrigerated pie crust (1/2 of 15-oz. pkg.)
1-1/2 cups Shredded Cheddar Cheese
1 pkg. (10 oz.) frozen chopped broccoli, thawed, drained
4 eggs
1-1/2 cups half-and-half
PREHEAT oven to 375°F. Prepare pie crust as directed on package for unfilled 1-crust pie using 9-inch pie plate. Sprinkle half of the cheese evenly onto bottom of crust. Top with broccoli and remaining cheese.
BEAT eggs and half-and-half with wire whisk until well blended; pour over ingredients in crust.
BAKE 40 to 45 min. or until knife inserted in center comes out clean. Let stand 10 min. before serving.
Note: Before placing quiche in oven, be sure to place a cookie sheet in the oven just in case the quiche overflows. Don’t want to get your oven all dirty.

2-pack of frozen pre-made DEEP DISH pie crusts.
Filling
8 eggs
1 cup milk
1-1/2 cups mayonnaise
4-5 chopped shallots or 1-2 small chopped onions
2 lbs frozen and defrosted spinach, drained
3-4 cups of grated swiss cheese
1-2 cups sliced mushrooms, sauteed first
salt and pepper to taste
Mix all the filling ingredients very well.
Dump the mixture evenly into the two crusts.
Bake for around 45 mins at 345°F, until the top is firm and golden brown.
You can make this with almost any vegetable/cheese combination that you like, just make sure you have eggs and mayonnaise.
Freeze any leftovers and microwave later for a quick meal or snack.

For a change, I decided to whip up a quiche recipe that The Missus came up with a few years ago, which we generally call "breakfast quiche". Basically, take a regular quiche recipe but instead of a pastry crust, make potato hash browns.
Tonight’s dinner was a leek and tomato quiche, with asparagus and a simple green salad. Tasted like spring.
