Hummus is a creamy puree of chickpeas and tahini (sesame seed paste) seasoned with lemon juice and garlic, and is a popular spread and dip in Greece and throughout the Middle East. Hummus can be served as part of a meze platter; with bread or vegetable crudités for dipping; as a spread or filling for pita, lavash or Turkish pide bread; or as a tasty, creamy alternative to butter in sandwiches. A spoonful or two can also be added to Middle Eastern or Greek-style pilafs and stews to add richness.

2 cloves garlic—roughly chopped
¼ cup lemon juice
¼ cup water
14 oz (400g) canned chickpeas (garbanzo beans)—rinsed and drained
½ cup tahini
1 teaspoon sea salt
PLACE all ingredients in a food processor or blender and process until smooth, scraping the sides occasionally.
Variations: If you like a spicier hummus, add a small red chili (chopped) or a pinch of cayenne pepper, or try a little cumin for a more exotic variation.

Tip: Prepare extra quantities of hummus—it can be refrigerated, covered, for up to 1 week and frozen for up to 3 months.

1 to 3 cloves garlic peeled (use more or less depending on your preference; more garlic gives the dip an extra zing)

If you’re feeling adventurous, experiment with seasonings — try a bit of ground coriander, fresh mint or cumin. Serve with pita bread or pita chips — look for the whole wheat variety. To reduce fat, omit the tahini. For a festive touch, serve colorful cut up vegetables on the side. Try red and green bell peppers, cucumbers, broccoli, cauliflower or green onions.

easy, I don’t even go by measurements anymore when I make it.
Drain a can of garbanzo beans and place that in a food processor, along with the juice of one lemon, salt, a peeled garlic clove, 2 tbsp to 1/2 cup tahini, a tablespoon of water, and some olive oil. Grind until smooth, then adjust flavors. If it is not sour enough, add more lemon juice. If it is too thick, add more water or olive oil or lemon juice? Place it in a bowl and garnish with parsley and more olive oil.

Red Pepper Hummus
INGREDIENTS
2 cloves garlic, minced
1 (15 ounce) can garbanzo beans, drained
1/3 cup tahini
1/3 cup lemon juice
1/2 cup roasted red peppers
1/4 teaspoon dried basil
DIRECTIONS
In an electric food processor, combine garlic, garbanzo beans, tahini, and lemon juice. Process until the mixture is smooth. Add roasted peppers and basil; process until the peppers are finely chopped. Season with salt and pepper. Transfer hummus to small bowl, cover and chill until you are ready to serve.

INGREDIENTS:
2 1/2 cups of canned chickpeas
1/3 cup of freshly squeezed lemon juice
1/4 cup of tahini
2 cloves of garlic, crushed
1-2 tablespoons of olive oil
1/2 teaspoon of ground cumin
1/2 teaspoon of cayenne pepper
pinch of freshly ground black pepper
1 teaspoon of salt
1/3 cup of water
parsley and olive oil to garnish
PREPARATION:
Put 1/2 the lemon juice and all ingredients into the blender except the chickpeas (and the parsley and oil for garnish) and blend for 5 seconds. Add the chick peas and blend on high until it reaches the the consistency of sour cream, but granular, about 10-15 seconds.

Blend in remaining lemon juice to taste. If the dip is too thick but you don’t want to add more lemon juice, add a little water slowly and blend until it reaches the correct consistency.
Pour into a serving bowl, cover and refrigerate for a few hours before serving. (It can be eaten immediately, but becomes even more flavorful if left to chill well.)

Drizzle of olive oil over the top and add a garnish of parsley before serving. Serve with pita wedges or slices of whole grain breads.

well first of all, there are alot of really good store bought Hummus you can try. Athenos is my favorite. But for a good home recipe just I just get a 32 oz can of chick peas, mix with a1/4 cup tahini paste (available on ethnic isle of your grocery store) 2-3 chipoltle peppers in adobe sauce. 3-4 fresh lemons(juice and zest). and 2 tbl spoons seasame oil. And salt and peppar to taste. Mix well in food processor. I like mine not quite so smooth. But mix to your consistency, then when finsished mixing top with chopped herbs. I like cilantro or chives. But you can put whatever you like. toast some pita bread and its delicious.
