The chicken recipe is from this book. The corn recipe is from this book. The potatoes are something I’ve made several times in the past. Everything here is pretty simple to make and quick to cook.
Ginger-soy Chicken
3 tbsps vegetable oil (I used peanut oil)
1 1/4 lbs chicken breasts cut into thin strips
salt and fresh ground black pepper
2-inch piece of fresh ginger, peeled and minced
4 cloves of garlic, chopped
1/2 tsp crushed red pepper flakes
6 scallions, cut into 2-inch lengths, the cut lengthwise into thin matchsticks
1/4 cup tamari
3 tbsps honey
1 head of iceberg lettuce, core removed and shredded (this, I didn’t use)
Heat a large nonstick skillet over high heat. Add the vegetable oil. Add the chicken and season with a little salt and lots of black pepper. Stir-fry until the chicken is all white, then add the ginger, gralic and red pepper flakes and cook for 2 minutes. Add the scallions and stir-fry for another minute. Add the tamari and honey to form a glaze for the chicken. Remove from heat and serve on a bed of lettuce, if desired.
I didn’t have any tamari, so I used regualr soy sauce, so I’m sure it’s not quite the same.
Fried Corn with Green Chile
3 cups of corn (fresh or thawed frozen)
1/2 cup diced yellow onion
3 tbsps unsalted butter (I only used two, still very good butter taste)
1 can (4oz) diced green chiles
salt and pepper to taste
In a large pan, saute the corn and onions in butter until tender. Then stir in the green chiles. Add salt and pepper to taste and serve.
Potatoes>
I just quarted up some small red potatoes, sprayed with some olive oil and sprinkled with salt. Then I drizzled some low-fat sesame ginger salad dressing over each of the potatoes, put them in a 400 F oven for about 20 minutes (or until done) and then broiled them for about 3.
You can also just microwave the quarted potatoes for about 10 minutes, then add the salad dressing and broil about two minutes on each side.
Everything was good. Next time I try the corn I might add some jalapenos to kick up the spice level.

Most of my meals are just simple preparations. I’m not fancy enough to make every meal gourmet. This is a beef stir fry with rice. I take a package of stew beef and cut into bite size pieces, marinate with stir fry sauce for a few hours, and cook in pan with thinly sliced carrots and celery.
I’m putting this in the recipe group, but I feel a little sheepish. I don’t know the quantities for any of those ingredients. I’ve just sort of learned by watching my mom. Sorry.
EDIT – okay, I realize now that most people do not make their own stir fry sauce, so I’ll try to be a TAD more descriptive. Normally, to make stir fry, *I* prefer much lighter sauces rather than the heavy or thick sauces you find at most Chinese restaurants. So bear that in mind please.
In a jar, I mix a small quantity of water with maybe 1/2 tsp corn starch, 1-2 tsp soy sauce (dark), 1 tsp brown sugar, 1 tsp beef or chicken bullion or replace with fresh stock (you don’t make your own stock? You can use broth, but stock will thicken better), 1 tsp sesame seed oil, sprinkle of crushed sesame seeds, 1 tsp sherry (you can use mirin), and this fish powder (bonito powder? I don’t know what it would be called). Mix and add to stir fry while cooking.
I’m not at home, so I’m not exactly sure this is it, but I haven’t looked in my recipe book in ages. You can add garlic, ginger, oyster sauce, or any other number of things to alter the taste profile a bit. Also, you can replace all those tsp’s with "a splash of…" since I don’t actually measure any of this.
I will also use this same mixture to marinate, but keep in mind that if you add the sauce from the beginning, then it can burn.
I’ll check the recipe tonight and rewrite this now rather lengthy description! ^_^;;;

"This dish is a fusion of French and Mexican cuisines. Tender and spicy chicken mole is wrapped inside sweet corn crepes and topped with a roasted corn pico de gallo. The chicken is tender and rich and the salsa light and acidic. Both components match well with the complex flavor of the mole sauce.
The mole begins with toasted ancho, guajillo, and chipotle chiles. Caramelized jalapeños, browned onions, and charred sweet corn add an element of sweetness. To that I added fried tortillas, dried apricots, raisins, and toasted almonds. After stewing for 3 hours in chicken stock the mole is ready to puree with a touch of Mexican chocolate, cinnamon, and lime juice. The result is a sauce that’s both sweet, sour, and spicy. The long list of ingredients melds to form one uniquely complex flavor.
I made the chicken by first curing chicken legs overnight in a mixture of salt, sugar, cumin, and coriander. The next day I covered the chicken in oil and braised it in the oven low and slow, about 200 degrees. After five hours the meat was falling off the bone. I then cooled the chicken, shredded the meat, and mixed some mole sauce into the shredded meat.
The crepes I created from a standard crepe recipe to which I added ground freeze dried sweet corn and a corn stock that I made from leftover corn cobs. The crepes have a very bright and intense sweet corn flavor.
Finally, the pico de gallo is a simple combination of roasted sweet corn, diced tomatoes, red onions, and jalapeños. It provides some acidity to compliment the rich braised chicken. The shredded chicken is rolled inside the crepes, which are placed on a bed of the intense mole sauce. A bit of sweet corn pico de gallo finishes off this simple plate up."

all you need is milk, then flour, bread crumbs will work if you want to use that. Then mix some garlic, salt and pepper. Then fry it. that’s what I use, turns out good every time.

Baked Crispy Fried Chicken recipe
Ingredients:
1 cup of flour.
1 ½ cups of unseasoned breadcrumbs.
1 teaspoon of salt.
1 teaspoon of pepper.
1 tablespoon of paprika.
½ teaspoon of garlic powder.
½ teaspoon of onion powder.
1 chicken, cut-up.
2 medium eggs.
Mix flour, breadcrumbs, salt, pepper, paprika, garlic powder and onion powder together in a paper bag.
Dip the chicken pieces in egg then shake two or three pieces at a time in the bag.
Place the coated chicken skin side down in a greased pan.
Bake the chicken at 400°F (205°C) for 30 minutes, then turn over, reduce heat to 350°F (175°C), and continue baking for about another 25 minutes.

all you need is the flour, oil, egg, and get a little seasoning.

You absolutely make basic fried chicken with your ingredients, but if you can get a couple more things to make it much better, it would turn it into a much better meal. Some basics like garlic powder, onion powder, italian seasoning (if not using seasoned bread crumbs) and some parmesan cheese, and of course some eggs to use to be able to coat the chicken with the breading. Just mix them in with the bread crumbs and it makes it very flavorful. Then heat oil in pan around 1/2-3/4″ deep in pan and cook turning around 3-4 times in a 20-35 min period (depending on thickness of chicken). And you can always bake them also and it is just as good and healthier.

Mix an egg with a cup of milk. Salt and pepper some flour on a plate. Dip chicken pieces in the milk and egg mix and coat with flour. Heat the oil and put in chicken pieces over medium high heat. Chicken normally takes 8-10 minutes on each side to cook. You can make gravy too. Pour out all of the oil that’s left except for a couple of tablespoons. Heat and mix in a little flour and stir it around until it becomes brown, then add a cup of milk and stir. Turn off the heat and serve as soon as possible with mashed potatoes.

You need seasonings. Here is my recipe:
This recipe came from an old cook from my town. He is well know thru out the county for his fried chicken.
8 cups flour
2 tbsp onion powder
2 tbsp celery salt
2 tbsp poultry seasoning
2 tbsp white pepper
2 tbsp salt
Mix everything well and put in a reealable container. You will obviously not need the whole recipe, and it is great for chicken fried steaks, chicken nuggets, or anything that calls for seasoned flour.
Set up 2 bowls.One with ice water and one with the flour. Get a large sifter handy.
Dip chicken in the water then flour, then water and flour again. Drop in 350 degree oil. If ou have enough oil to submerge the chicken then your set a timer for 15 min exactly. If you only have enough oil to cover it say half way then probably around 5-7 minutes per side.
SIft the flour after every 4-6 pieces of chicken. The removes and clumps in the flour. If left in the main bowl these will stick to pieces and end up becoming hard rocks on your chicken-NO GOOD.
Even as the water becomes thicker with all the left behind flour keep it unless it gets real thick and goopy-ish. Ot add to the crust of the chicken.

Ingredients
Salt and pepper, for seasoning chicken
Crisco shortening, for frying
3 eggs
1/3 cup water
2 cups self-rising flour
1 teaspoon black pepper
1 (2 1/2 pound) chicken, cut into pieces
Directions
Heat shortening in a cast iron skillet to 350 degrees F.
Beat eggs with water in a small bowl. In a shallow bowl, season flour with pepper. Dip chicken pieces in egg mixture and then coat well in flour mixture. Carefully add to hot shortening, in batches if necessary, place lid on top of skillet, and fry until brown and crisp. Remember that dark meat requires a longer cooking time (about 13 to 14 minutes, compared to 8 to 10 minutes for white meat.)
