I have a healthy food fest at school and have to come up with a healthy recipe to put in the cookbook in the end. Any suggestions?

Tabouli Salad is awesome!
Its healthy, tastes great cold and is super easy to make!
heres the recipe i use….enjoy!
Tabouli:
2 cups cracked wheat (bulghur)
2 cups very hot water
1 cucumber, chopped
2 small tomatoes, chopped
1 bunch green onions, (8) sliced
1/2 cup fresh chopped mint
2 cups fresh chopped parsley
1 clove garlic, minced (optional)
Dressing:
1/2 cup fresh lemon juice
3/4 cup extra virgin olive oil
1 tablespoon pepper
2 teaspoons salt, or to taste
Soak the cracked wheat in the hot water until the water is absorbed, about 30 minutes. When it’s ready, drain any excess water, if necessary, and squeeze dry.
Meantime, prepare the vegetables for the salad and mix the dressing ingredients together. Set aside.
Stir the prepared wheat, other salad ingredients, and dressing together in a medium bowl.
Serve chilled or at room temperature. Makes about 8 cups, 12 to 16 servings.

I like macaroni salad, and even the mayonnaise will not go bad. Onions are the worst part of it that could possibly go bad.

Saysurf read my mind I was going to say tabouli which is made using couscous.Couscous is an Israeli/Moroccan pasta. It delicious especially with roasted garlic and olive oil.

Multi-bean salad or Calico salad are both pretty healthy.
Or a fruit salad combination of sliced strawberries, other berries of choice, bananas, oranges and then use a little cranberry (or orange) juice to moisten all of the fruit.

There’s always the classic ambrosia: cut the peel and pith (white part) off oranges, then cut into slices. This exposes the pretty orange color without the pith. Then mix the orange slices with shredded, unsweetened coconut. Don’t use fresh, raw coconut because it’s too chewy. That’s all there is to this dish. We love it, and it’s not expensive. This is always served chilled.
