I love brown rice with veggies and tahini sauce thrown in, and hard boiled eggs, but I’m looking for more quick and healthy foods that I could make in large amounts to have on hand for the week. Thanks!

u can try making a tuna salad. one can of tuna, two tbspn or more of mayo,mustard,relish,onions,pickles,celery, salt and pepper to taste. and voila! youre good to go.

Are you looking for easy to grab foods to use as snacks, or entire meals?
These are items I keep handy (I have lost 20 lbs)
If its snacks:
1. keep a few carrots, celery and brocolli in a dish that you can snack on with ranch dressing.
2. deviled eggs, or just hard boiled
3. fruits, I love mango’s, and pineapples, sliced apples and bananas. Having them already peeled, cored, & sliced.
4. waldorf salad (it has apples and celery and pecans in it) so you know its good for you.
5. Keep peanut butter on hand, its good on celery and apples, and its good for you.

If it meals: these are a few of my favorites
1. fish (like tuna salad) is healthy
2. Broccoli w/ rice
3. salads with Lettuce, carrots, celery, broccoli, sprouts, sunflower seeds, cheese (you can keep each item seperate so you can eat it as a salad or dip them as a snack)

Granola is a great healthy snack:
4 cups rolled oats
1 cup wheat germ
1/2 cup sunflower seeds
1/4 cup chopped walnuts, peanuts, almonds, or pecans
1 cup honey
1/2 cup oil
1/2 teaspoon vanilla extract
Preheat the oven to 350 degrees.
In a large mixing bowl, combine the first 4 ingredients.
In a 2-quart saucepan, heat the honey, oil and vanilla until syrupy.
Add to the dry ingredients and mix well.
Spread on a jellyroll pan.
Bake for 20 minutes, stirring every 5 minutes.
Store in a covered container.
variations:
add one or more of these
1 cup coconut, 1/2 cup any dried fruits (apples, cranberries, raisins)
and you can omit the wheat germ (if you don’t have any on hand)
