Mini Blueberry Cobblers

I keep eyeing the blueberries in my CSA share every week, and every week my kids consume almost all them before I get a chance to do anything with them. I’m usually left with just a bite or two to top my yogurt with. So, this week, I picked up some extras for me.

No real recipe for these cobblers. I tossed enough blueberries to fill four 4 oz. ramekins in a little corn starch and ginger, put them back in the ramekins and added about 1 tsp. honey and a squeeze of lemon juice to each, then topped it with a few heaping tablespoon dollops of a loose buttermilk biscuit batter with a little sugar and cornmeal added. Sprinkled some slivered almonds and raw sugar on top and baked them at 400° F for about 18 minutes. For some reason that I have yet to fathom, the biscuit batter ended up noticeably salty (there was only a tiny pinch of salt in it; I suspect I might have accidentally used salted butter–don’t do that. I don’t usually keep salted butter in the house, but happen to have some at the moment.) The cooked blueberries were delicious, though.

These also gave me a chance to try out the new light diffusion rig I put together (two large PVC frames with detachable bases, with translucent white material stretched over the frames, lit from behind with two cheap 250W Home Depot halogen work lights). I’m pretty happy with how this came out, but I need to build stands for the work lights to make setup a bit simpler.

We baked our first batch of biscuits for Tess this morning. They’re the simplest ones in the recipe book and we may have had the over slightly too hot, but Tess doesn’t seem to care :-)

First attempt at scratch-made biscuits. So simple, yet, as I have learned, quite an art form. Apparently the key is not to overhandle the dough, lest you work the gluten too much. Tricksy, tricksy.

I used this recipe. Eventually, I wanna try to make these, but I think that’s for the advanced class. Also, I shoulda bought White Lily flour, but I didn’t think of it in the store. Oh well.

Kids gobbled the biscuit I gave ‘em and will likely be eating these for breakfast tomorrow.

Easy, super-basic "cream" biscuits with whole wheat, oatmeal and super-awesome Harmony Organic Whole Milk (it came in glass bottles! How could I resist?). The second batch I put together had allspice, ginger and coconut with a hint of sugar for the kiddies.

Here’s one extremely simple recipe, but tastes really good.

Simple Biscuits

2 Cups Flour
1 Tbsp Baking Powder
1/4 Tsp Salt
1/4 Cup Vegetable Oil
1 Cup Milk

Preheat oven to 375f.
Sift dry ingredients together. Add oil and milk. Stir until ingredients are combined.
Do not over stir.

Dough will be slightly sticky, so flour your hands and form into 9 equal portions.
Place dough in a greased 9×9 pan and bake until slighly brown.

    The lighting is great, and the cobblers look delicious! I have to say that the almost blood-red dribble of blueberry juice looked a little alarming in the small size, though. :-)

    Hah! I usually have one that looks like this, too (the one in the front). It’s always the poor pitiful last blob of dough left over from cutting the other prettier, circular ones. The ugly duckling of the group. Still tasted good, though, I’ll bet. Who got to eat it?
