Need Healthy Food Ideas For My 2 1/2 Year Old?

I am running out of good foods to feed my 2 1/2 year old. He likes pretty much anything he’s not that picky. I want to feed him a well balanced diet but I’m 9 months prego so I’ve been slacking a little just because I don’t want to cook. I just feel like he is getting bored with his food choices and I was wondering if anyone out there has any good, healthy, relatively simple meal ideas! Thanks!

    My 2 year old loves hummus sandwiches, there are a variety of flavors (he especially loves the garlic and red pepper varieties) and you could also just supply the dip with whole-wheat pita bread cut into triangles for dipping (messy but a good alternative to chips and salsa). Whole wheat pita bread is also good for making pizza with just a little organic spagetti sauce, low-fat cheese and veggies (my son likes spinach, olives, and mushrooms). Those steam bags of veggies in the freezer section are always great for a side dish. I also add the little frozen peas and carrots to everything to up the veggie content (pasta, casseroles, whatever, even frozen or packaged foods can be improved by adding a cup of veggies into the mix.) For breakfast, my son and I alternate between Trader Joe’s oatmeal with cranberries (lots of flax seed and high in fiber, plus individually packaged for an easy morning) and omlets made with “Best of Egg”, spinach, tomatoes, and low-fat cheese. To up the nutrient content of pancake/waffle mix, I add flax seed and mash up a ripe banana into the mix. Oh, and Trader Joes also has whole wheat couscous that I make with chicken broth instead of water and cooks in 5 minutes for a great (if messy) side dish.
    Being the mother of a two year old and a two month old, I’d also like to suggest trying something like Dream Dinners where you can prepare a whole bunch of dinners in advance and then just pull them out of the freezer all month. http://dreamdinners.com/main.php?page=ms… All the nutritional information is available online so you know in advance what you’re getting and I usually just add one of those steam veggie bags as a side dish and I’m done – they’re really good enough even for all that company you get after having a baby!     broccoli with cheese melted on top (do it in the microwave)
    elbow macaroni with butter, milk, pepper, and parm cheese
    veggie chicken nuggets with applesauce dip
    small pieces of turkey dogs with ketchup
    peanut butter on celery or toast
    apple slices with cinnamon
    macaroni and cheese with peas
    organic instant oatmeal made with milk
    fresh berries (I only buy whatever’s on sale!) mixed with yogurt
    scrambled eggs with cheese and diced tomatoes
    spaghetti and turkey meatballs
    Super Walmart has single serve veggies in 4 packs, they’re great
    I also like the single serve fruits sold like that.
    Fig newton cookies are a good snack.
    Target sells lots of organic food now at reasonable prices.

    Stir fry!
    *Get frozen asian veggie mix (or fresh veg)
    *Brown rice noodles (cook in no time)
    *Meat or frozen shrimp
    *Commercial sauce or make your own
    Mini pizzas on a tortilla, english muffin, bagel, whatever
    Wraps. Grill veggies ahead.

    Sushi! tuna and salmon nigiri, right out of the case;
    frozen peas;
    DIY mini-sandwiches – just cut everything in quarters and let him self-assemble;
    grated apple on cereal or yogurt.

    CONTINUE WITH THE SAME FOOD, BUT DRESS IT UP A LITTLE. USE VARIETIES OF DIPPIN SAUCES, MAKE FUNNY FACES ON HHIS PLATE. LET HIM FED YOU. LET HIM HELP WITH THE FOOD PREP! ALSO THERE ARE TONS OF PLACES WHERE KIDS EAT FREE AT RESTURANTS!

    I have a 2 1/2 year old too – but mine is sooo picky. She loves yogurt, avacado, any kind of fruit but blueberries and strawberries are her favorite, olives, thinly sliced cheese, cold pasta salad and brown rice cakes.
    Believe it or not both of my kids (I have a 3 1/2 year old also) love salad. I put dark leaf lettuce or spinach with bell peppers, cucumbers and tomatoes diced up into pea sized pieces and I add rinsed, canned beans for protien. They like just about any kind of salad dressing. They also like cold peas, shredded carrots, black olives and hard boiled egg on their salad.
    They also like baked sweet potato french fries as a side item.
    I make up some “trail mix” for breakfast or a snack. I put cereal like cherrios, raisins and other small pieces of dried or freeze dried fruit, sunflower seeds, small pieces of cashews (not whole ones, I’m paranoid about choking) and if its an afternoon snack I throw in a few m&ms.
    For a quick but messy breakfast I toast a frozen whole grain waffle and spread a little peanut butter on it, then either drizzle a little honey or sprinkle a little cinnamon sugar on it. I cut it up into small pieces so she doesn’t make as much of a mess.
    They both like pizza made from english muffins, spag. sauce, shredded cheese and whatever leftover cooked veggies I have diced up. They also like diced ham on it.
    Someone else mentioned hummus. My kids like anything they can dip so I give them hummus, black bean dip or guacamole with things to dip in it like thinly sliced cucumbers, bell peppers, carrots, pretzel sticks, crackers, pita bread or whatever else I find that they can eat.
