One Pot Chicken and Penne Stew with Dill

Adapted from Margaret Fulton’s One Pot Fish and Risoni Stew recipe, using the chicken breast fillets and penne I had on hand. Just needed to buy some leek and carrots.
Instead of parsley or coriander, I opted for dill. I love the grassy, aniseedy flavour of dill with chicken and fish. The dill and tomato combination makes it a rather like Greek youvetsi! Yum.

Really simple.
Baked Chicken
(loosely adapted from – www.seriouseats.com/recipes/2010/12/dinner-tonight-chicke… )
Ingredients
serves 4, active time 25, total time 35
2 boneless, skinless chicken breasts, about 1 1/2 pounds
1/2 cup all-purpose flour
kosher salt and black pepper to taste
2 eggs, lightly beaten
1 cup panko bread crumbs
1/4 cup grated Parmesan
Procedures
1. Pre-heat oven to 350 degrees
2. Place chicken breasts between two pieces of plastic wrap and gently pound to uniform 1/2-inch thickness.
3. Put flour, eggs, and panko on three separate plates. Season flour with salt and pepper. Dredge chicken in flour, then egg, then panko, being sure to thoroughly shake off excess between each stage. Place breaded cutlets on a plate and transfer to refrigerator for 10 minutes.
4. Remove cutlets from fridge, place on an foil lined baking sheet (w/ a thin layer of Pam) and cook in the oven for about 20 minutes (center of the breast should read 155 F on the thermometer)
Black Truffle Pasta

Ingredients
serves 4 to 6
1 pound angel hair pasta
Kosher salt
3 ounces black truffle butter
1/2 to 3/4 cup heavy cream
Drizzle of black truffle olive oil (optional)
Procedures
1. Bring large pot of salted water to a boil. Add pasta and cook until al dente; check it 1 minute shy of package instructions. Do not overcook angel hair, or it will fall apart when tossed with sauce.
2. Drain pasta, and in the same pan, add butter and cream. Heat over low heat until butter is just melted. Return pasta to pot and toss gently with tongs to distribute the sauce evenly over pasta. Season to taste with salt. Transfer to large serving bowl and drizzle very lightly with black truffle oil (if using). Serve immediately, with lots of champagne.

The Gravy
Ingredients:
chicken. which ever bits you like. I like to use skinless breast for this. tenderloins is fine
one packet of french onion soup mix
one tin apricot nectar. the size that’s about 420g
Method:
place chicken pieces into a casserole dish.
pour apricot nectar into a small saucepan and add the soup mix. stir over heat until the soup and nectar are blended. not very long at all.
add soup and nectar mix to casserole, and bake with the lid on, in the oven, for about 2 hours at around 180C/350аF
serve with crisp vegetables, and jacket potatoes or rice.
A delicious dish, that is so simple to make, it’s disgusting!
This serves however many people you want. Just adjust the chicken quantity. Once I get to over about 6 people I double the soup and nectar quantities.
And I always try very hard to resist saving myself a wineglass full of the nectar. It’s one of my favourite drinks.

This is a dinner I made for my wife. After putting so much work into a meal, I’ve been wanting to take a picture. Actually this was a reasonably simple. At the top is boneless chicken breast with sauteed onions and yellow bell pepper. First I cooked some bacon, and browned the chicken breast with the bacon. The chicken also had a barbeque sauce that I like to make myself. Again it’s quite simple, just tomato sauce, brown sugar, honey, chili powder, minced onions, black pepper, a little mustard, a little cumin, and probably a few other things. If you want a recipe, that’s it. I don’t bother to write things down, or measure stuff (unless I’m baking). I know that’s not the way to make repeatable dishes, but everything ends up being a little unique. I often don’t even know what it’s going to e until I’m done, anyway.b

here is a stove top recipe which is super easy.
Lazy Gourmet Chicken
1 tbls sugar
¼ cup vinegar
½ cup soy sauce
4 garlic cloves, minced
¾ tsp salt
1 tsp pepper
2 ½ – 3 # fryer, cut up or 2-3 pounds legs/thighs/breasts
Combine all ingredients except chicken in a large, tightly lidded saucepan and bring to a boil. Add chicken pieces and coat each well. Keep covered and reduce heat, simmer 35-40 minutes, basting several times along the way.

you can cut it into strips and coat it with flour, salt, and pepper and fry the strips for chicken tenders. If you have a small electric grill you can grill the strips with whatever seasoning you like. If you want to cook the chicken whole, put a little oil in a small pan and saute it with some chopped garlic and onion, salt and pepper. Brown on both sides and then put a lid on it and cook on low for about 40 minutes. You can bread it with flour and fry it if you want to use more oil.

Italian salad dressing is the marinade for the chicken in this simple and elegant main dish recipe.
Prep Time: 15 minutes
Cook Time: 15 minutes
Ingredients:
1/2 cup Italian salad dressing
1 tsp. dried Italian seasoning mix
4 boneless, skinless chicken breasts
16 ounce jar alfredo sauce
10 ounce package frozen chopped spinach, thawed and well drained
2 Tbsp. olive oil
12 oz. cooked fettuccine
1/2 cup grated Parmesan cheese
Preparation:
Mix dressing and Italian seasoning in large glass bowl. Add chicken breasts, turning to coat, and cover. Refrigerate 30 minutes. Combine alfredo sauce with spinach in medium bowl. Heat oil in large nonstick skillet over medium heat. Remove chicken from marinade, and cook chicken in oil 7-10 minutes, turning once, until thoroughly cooked. Add alfredo sauce mixture. Cook until bubbly. Serve over cooked and drained fettuccine and sprinkle with Parmesan cheese. Serves 4

Marinated Chicken Breasts
5 – 6 chicken breasts, bone in
1 bottle Zesty Italian Salad Dressing
Place chicken in large ziplock bag. Pour Italian dressing over chicken in bag. Add enough water to cover. Seal well and refrigerate overnight.
These breasts are wonderful cooked over indirect heat on the grill, turn often and baste with leftover marinade. Can also be sauteed in a few tablespoons of butter in skillet on top of stove. Brown well in butter over medium heat, add about 1/4 c. of marinade, cover and simmer for about 15 minutes.

You can make these on stover top…..hot plate…or crock pot:
COLA CHICKEN
(And more variations of recipe…my preference…wings or ribs)
4 skinless, boneless chicken breasts
1 cup catsup
1 12oz. can cola (pepsi, coke, etc.)
Put chicken in a non-stick pan.
Mix together catsup and cola, pour over chicken.
Bring to a boil. Cover, reduce heat and cook 45 minutes.
(turning chicken a few times, while cooking…to prevent from sticking to pan)
Uncover, turn up the heat and continue to cook until the sauce
becomes thick and adheres to the chicken.
It turns into the most incredible BBQ sauce. Yummmm!
You can double the recipe and use more pieces of
chicken….wings…would be ideal…add some hot sauce….presto “Hot Wings”!
I have used Ribs, just as good.
I tried this recipe with ‘meatballs’….was equally
as good…served over rice.
I found another variation…..omit the catsup and add a small jar of Salsa (any variety).
I have tried using Salsa (omitting the catsup….not).
You’d think a recipe with only ’3′ ingredients couldn’t be messed up….wouldn’t you??
Well…while I was preparing to fix the ‘Cola Chicken’ recipe
using Salsa…..I was also trying to carry on a conversation with my
husband…(just proves…I can’t do two things at once)….mixed Salsa & Catsup (before I realized I was supposed to leave out the catsup) & Cola……..still turned out really tasty (to me)…might be a little sweeter than some of you like.
I fixed chicken wings, (using the above recipe)
but…I added the spices from a MILD (I don’t care for “HOT”) Buffalo Wings packet…(the kind you get to bake in the oven)…..I thought it was really good…..(but you/I can’t find a ‘bad’ way to fix chicken).
Finally….!! I fixed the ‘SALSA’ chicken……that’s good , too.
Another (bright)idea…..I thought of trying……replace the
catsup with a bottle of Shrimp Cocktail Sauce…and add a bag of (pop corn) shrimp…..!
Fixed the shrimp with cocktail sauce……eh…wasn’t all that
great…was OK…probably won’t be fixing it again.
Also tried beef stew cuts……that was pretty good…..I can see
myself making this again.
Served both over rice…..think the stew cuts would have been just as
good over noodles.
Try little cocktail wieners/sausages…for appetizers.
Pork chops…porksteaks.
Mushroom Chicken
4 boneless/skinless chicken breast (or any pieces you like)
1 can cream of mushroom soup.
1 can water
Place chicken in crock pot (or sauce pan for stove top cooking)
mix soup & 1 can of water together
pour over chicken
cook on medium heat until boiling then reduce heat and cook until chicken is really tender & falling apart.
Serve over noodles or rice or dressing….or???

Simple Caribbean Jerk Chicken
Ingredients
* 1 envelope Italian salad dressing mix
* 2 tablespoons brown sugar
* 2 tablespoons oil
* 2 tablespoons soy sauce
* 1 teaspoon cinnamon
* 1 teaspoon thyme
* 1/2 teaspoon ground red pepper
* 2 1/2 lbs chicken pieces
Directions

Mix all ingredients except chicken in bowl.
